The youngest of Estelle's 10 kilo cheeses. Her cheese making facilities out in Paterson are somewhat reminiscent of an English Victorian swimming bath with old tiles all over the place. The name De Pekelaar means 'the pickler' in Dutch, and the subterranean tanks in which she brines her cheeses are old pickling pools. An easy eating breakfast Boerenkaas. Melts well
