A brushed rind style cheese from Dalewood. Due to the bacteria on the rind being manipulated in the maturation process, this cheese can have delicately animally aromas. The jersey milk keeps the buttery, clotted cream flavours flowing throughout the whole cheese. A very easy cheese to demolish a lot of in one sitting. Sits nicely with a not too hoppy IPA. Younger versions can be a great alternative if looking for a British territorial style cheese (Lancashire/Cheshire/Wensleydale)
