The larger of the two aged log goats' cheeses that Pepe Charlot makes out in Kommetjie. This one is similar to the classic French Loire Valley Saint Maure de Tourraine. Very well balanced throughout. The centre is creamy-chalky and the just inside the rind is less acidic sweet chestnut.
