Kefir Camembert

Cows' kefir was used instead of starter cultures which had the milk fermenting in overdrive. A dash of Penicillium Camemberti was added for white mold growth but there was no need to add yeast as the kefir is packed with natural yeasts that work symbiotically with the mold. Aged for 24 days. It went gooey fast so I had to eat it all. Pac man approved
