A semi-soft brushed rind cheese, giving off earthy aromas and gentle barnyard umami flavours. The central layer of vegetable ash comes from the necessity, before refrigeration, to cover the previous evening's curd in (originally) soot to avoid flies landing on the curd before the morning milk's curd is added.
