The real deal. Minimum 26 months aged from the Reggio Emilia region, Parma and has been written about from as early as 1348. Do not mistake this cheese for your shop bought "Parmesan". This is the "King of Cheeses". Samuel Pepys famously buried his with his wine during the Great Fire of London in 1666. Due to its naturally high glutamate levels there are massive umami flavours and the complex tyrosine crystals add to the texture.
