Unlike pretty much every other Pecorino in South Africa, this one is a sheep milk cheese. Pecorino MUST MUST MUST be made with sheep milk or else it is not a Pecorino. The word Pecorino in Italian means Sheep Milk Cheese. ItÕs quite simple. This one gets ludicrously good when aged but young versions are like sweet milk and beautifully balanced too. The aged version is great shaved and the young one works fabulously with pickled sweet green pepper and duck rillettes. Trust me brothers and sisters
