If you added goats milk to maple and pecan pie and left it to crystallize for 6 months, this is what you'd get. It has the tartness of a cheddar and the nuttiness of a gruyere with plenty of tyrosine crystals throughout to add another dimension. Great shaved on rocket or just eaten on its own. A powerhouse in the South African cheese world. A strong goats' cheese. Eat me.
