Known as the "King of English Cheeses" this classic blue cheese can legally only be made in the three counties of Nottinghamshire, Derbyshire or Leicestershire and makes the sides of your mouth salivate with its piquant notes. Big, bold, creamy, crumbly, rich, delicately spicy and salty with a hint of pepper. Eat with a good quality Port or pudding wine to balance the saltiness. Don't dig a hole in it and pour Port inside as is sometimes done. A waste of good cheese and Port.
