Soft, rich, seasonal cheese available from October to March only due to the cheese being made during the winter months when the snow on the mountains makes it impossible to make Comte, it's bigger and much older sister. This cheese, aged in a spruce bark binding, gets cheese buyers chomping at the bit for the season to start and rightly so. Left at room temperature, Mont d'Or as it is affectionately known, can be served with a spoon due to its gloopy texture and needs some choice slices of pickle and cured meats on the side. Pop in the oven for 20 mins if ya wanna.
